So I was fighting in arena with Hidan and Zabuza stopped my mystery with his water prison. Now on Hidans Mystery description it says immune to interruption. What would be classified as an interruption in this case? Acupuncture?

Guy's Mystery causes Interruption. Zabuza's Mystery causes Immobile, which is different from Interruption. Acupuncture would fall under the same category as Immobile. If you wanna fully protect Hidan, use Lightning Main's Immunity passive, so Hidan cannot be Immobilized or Acupunctured.

Actually he can, acupuncture goes through root, i cancel lightning curse teams all the time with Hinata in combo and pretty sure fire mains seal does as well, which is immobile. He won't get debuffed but it will stop his skill.

Hidans mystery is only immune to interrupt effect, nothing else unfortunately as pure interrupt is rather rare, only earth main and Guy come to mind.

This will not do anything to hidan.

It's and interrupt not an immobilization. His Barrier attacks from his mystery however will immobilize hidan.

the way it works is that when they are not effected by stuff like apuncture or the like it counts as a interrupt and that stops the skill
hidans skill being uninterruptable means if u are using lightning mains root it is basically impossible to stop his mystery

the thing is that acupuncture has 2 functions, stopping the attack and casting a debuff that lasts for 3 turns
the lightning main passive only avoids the debuff and not the stopping the atack part.

the stopping atack part isnt considered interrupt status because its called accupuncture, although you can call it interupt because they are words with similar meanings, but it doessnt work like that for the game AI.

which means that only if the skill clearly says it casts interrupt it wont be able to stop the atack
