Same, even my Roshi and Sailor Sakura were 1 shot by him. I really hope this is just a bug. Not sure if I will be able to finish Jinchuuriki Rescue today. :(

His formula is working correctly, he just wasn't meant to ever have 300k hp, just like Sailor Sakura who heal 20k+ if she is on immortal team here or Hiruzen, there is few others.

There is a few ways to pass him though, either kill them on turn 1 with your own curse hidans or light armor builds or imobilze/chaos them and kill them with mysteries next turn.

A simple way to remove him in rescue Jinchuriki is by asking the owner of that hidan team to remove him on their ranked main team (with their main) one day before the event starts (wednesday) and they can put it back on saturday.

If they won't consider it, then the only way is like what Dym stated. You c*so use mysteries that stops him from reviving like Mabui's.

As it was stated before, this is not a bug or error, it's how his passive scales his stats.
Please try to build your strategy to counter him, or try to talk it out with top ranked people to try and move hidan to other team in their ranked lineup ;)
