Kimimaro and Kisame have really high defense growth stats - highest I've seen/noticed.

Best growths in our version so far is Choji and GNW Choji, but honestly talents make the tankiest ninjas not growths, because of Kimimaros passive he is one of best tanks also Gaara has pretty crappy defense growth but because of super armor and shields he can outlast most ninjas.

hinata if you are wind main (for girl team), kimimaro for lightning (lightning and sword), kaze garra for earth(make both frontline unchase-able and a barrier that boost wind+earth)
probably also kimimaro for water, if you keep healing him, his defense just keeps stacking up, you can literally heal people to death.
I don't think fire main uses defense ninjas....

guy have a high amount of defense, but if u mean to tank in the frontline imo that would be kimimaro, gakido, hinata, sage naruto, 3*naruto, akatsuchi, susano'o sasuke.
