I'd probably pick Anko. Why? Let me cancel out a few teachers before explaining.
Jiraiya would be nice and yes I'd enjoy being a pervert with him but first of all, I'm a chick so that's bad, second, he's too focused on his books thus unable to teach properly.
Orochimaru is a no go for me since as much as I love Science, I'd hate the odds of being experimented on and thrown away after.
Tsunade is not for me since I lack the fondness for Medical Jutsu and I can't see myself having a good enough chakra control for me to grow in her domain.
Kakashi in the show focused too much on Sasuke and was quite late in meetings. I'd prefer a teacher who puts effort into teaching me and not acting as if it was a pasttime or a forced job.
Asuma has a laziness different from Kakashi. Out of the Rookie 9, his team didn't improve much in between graduation and chunnin exams so no go.
Kurenai might have been great for me, I do enjoy manipulations and illusions, but I'd only be taught Genjutsu and basics with her.
Gai would have made me motivated and he is my second choice of teacher, especially with how fun it might be but I'm not planning on relying on Taijutsu. Tenten didn't excel with Gai and I'd probably not excel with him either.
Any of the Hokages were immediately out of my thoughts since being taught by them would have meant being placed in the shadows of their students and I'd rather not be in the shadow of the Sannins or Sandaime.
So I explored those who aren't teachers in the show, my desires for a teacher was that he/she had an excellent repertoire of Ninjutsu, a great grasp of Taijutsu (mastery of a style), mastery of a weapon (sword, bow, etc.), a list of accomplishments, and an ability to motivate their student. In the end, Anko had all of those, with Orochimaru as her sensei she has a great repertoire of ninjutsu, snake style might be good for my body type, though she doesn't know how to wield a sword her kunai skills are unmatched, she's infamous in ANBU, and her snakes and * are a great motivator.
