what is a Tank ? How many different classes are there and how to find out if a ninja is a Tank or other?

This is not a clear-cut class, but more of a role in a team that a ninja can fill. Being at the front lines, soaking the incoming damage insteat of her more fragile teammates, giving them time to prep and dish the damage.
The other two core roles are healer and DPS (damage-per-second). You can judge which role fits a certain character by his strong stats and his abilities.
That said, Hinata is called a Tank, because that's the role she excells at.
