This version of the game is only capable of supporting English (minus the bugs and bad code that have some snippets of German). Selecting Germany as your country of origin is safe to do without changing the entire game's language or to other servers.

What is the selection for then? I speak english and German and have been playing on the English server for years now.

So is it just to get statistics?

I am guessing it is for the company to adhere to different places' policies. Maybe a slightly different terms and conditions of use for each area listed.
