About your question, there's a lot of ways on how to get Sun Scrolls even if you're not able to participate in Timed Events on weekdays. Few of them are from joining Sage World Arena Battlefields that takes place every Saturday and also Matsuri Challenge Arena every Sunday afternoon. You may also choose to keep your Sun Scrolls if you already reached the required amount for the Mission by keeping your Sun Scrolls in your Mail, like what Aca1902 said.
