Her description in game says "When the target Chakra is less than 30, the target number is increased to 7 units, Interruption are guaranteed." So what does that mean exactly? If the other team has less than 30 chakra? If so, it will be a lot easier than having to have a minimum of 50.

it just means that the targets hit by the mystery will increase when the opponent has less than 30 chakra, otherwise it doesn't decrease the amount of chakra left thats needed to trigger it, which is 50, so the minimum will stay the same.
