You cap your moon coins, once you reach the max anything you make it above that is converted to shells.

When you max your Sun actually. Moon increases everyday. Sun always stays at 5800.

Once you go over 5800, whatever rate you have, it will turn to strange stone.

You won't get anymore Sun though. Therefore it depends how well you do Sun events.
