Saving more than 35k coupons make no sense, there is not and there will never be an event where would be worth to spend the coupons in excess after the 35001st.
The only way I can see why to do so is how fast they release ninjas. Since saving 20k takes time, at least a ninja you would want will be mostly be released but you don't have enough at the time after spending.
