As for which gaara- if you have initiative, kazekage, if not- regular. With regular the tradeoff is you swap immobile during chase for barrier. You'd need to see for yourself which gives you more. Regular gaara team also gives you more tankiness(starting shield for winds), more burst r2, but less during r3 and after. Kazegaara team has overall better total r1+r2+r3 dps and immobile, also shields 2 targets for 3 rounds as long as you have barrier up.

I'm aware that you asked specifically for wind teams, but you have all required ninjas for 2 water meta teams (mabui, 1010, mei + lightning tiger) and (ao, chojuro, mei + gamaken). That's also worth considering.
